Favas & Farro Bowl!



Let's talk about healthy lunches. Or healthy dinners. Heck, you could even eat this one for breakfast. It has all the ingredients needed for good health and longevity. Plus it's pretty darn tasty too.....


Farro is an ancient, nutrient-packed whole grain dating back 2000 years ago. It is high in protein and fiber, making it the perfect complex carbohydrate to add to your meal plan.


Fava beans are one of the oldest cultivated plants. They are a staple in the Blue Zone areas of the world where people often live to healthy, ripe old ages over 100. Similar to other legumes like lentils or split peas, they are excellent sources of fiber, protein and iron.


You might be able to find these ingredients in your local grocery store, but if not, they are readily available online by simply searching for them.


The "recipe" is too simple. I used a rice steamer to cook both the farro and the fava beans together in one pot. It came out perfect and all I did was push a button to start the cooker! They could also be cooked on the stove or all day long in a crockpot.


To my cooked portion of Favas and Farro, I added a spoonful of guacamole, an over-easy egg cooked in olive oil, and some diced red pepper and green onion.


It was most delicious ......
